Review: ‘Hello Fresh’ Sri Lankan Mahi Mahi Coconut Curry

Ever since I became a reluctant housedad three years ago, I have done all of the cooking in our family. My wife works long hours, so the last thing she needs to worry about is preparing meals when she gets home from work. So every day, I cook meals from scratch, first for our three kids, and then for me and my wife when she gets home from work.

And then I take photos and put them in the Recipe Shed. It’s a beautiful cycle of culinary love.

But every now and then, a housedad needs a break from cooking. And so this week, I’ve decided to take a break from my cooking duties and go to the pub.

But fear ye not, dear reader: my hard-working wife won’t starve – for I have drafted the help of Hello Fresh, an ingredients’ delivery company that sends you everything you need for inspiring meals to cook at home in super-quick time.

Back to me: It all sounds good – and ideal for my busy wife while I’m in the pub. And so, yesterday we took delivery of Hello Fresh’s Classis Box containing ingredients for three meals: Sri Lankan Mahi Mahi Coconut Curry with Fine Green Beans; Sichuan Chicken with Orange Pepper and Roasted Peanuts; and Italian Polpetti Soup with Conchiglie.

In the meantime, I’ll hand you over to my wife while I head out to watch England play Poland. Here’s her ‘Hello Fresh’ Sri Lankan Mahi Mahi Coconut Curry.

What it says on the recipe card: ‘We’ve taken a mixture of Sri Lankan spices to create this exotic, warming curry with a debut appearance by another exotic ingredient: fresh Mahi Mahi fillets. Found in warm, tropical waters around the world, it’s the perfect antidote to the onset of a chilly autumn.’

Serves 2

Ready in: 30 minutes

Ingredients:

2 fillets Mahi Mahi
1 tin organic tomatoes
1/2 cup organic coconut milk
1 tbsp Sri Lankan curry powder
150g brown rice
1/2 cup coriander, chopped
1 cup onion, diced
1/2 cup green beans
1 tbsp fish sauce

1. Boil a large pot of water with 1/2 tsp salt. Thoroughly rinse the brown rice for a minute under running water. Boil the rice for around 25 mins until soft enough to eat. Drain the rice, put it back in the empty pan (off the heat) and cover with a tea towel.

2. Peel and finely dice the onion. Cut the very tops and bottoms from the green beans and discard. Chop the green beans in half, widthways. Cut the Mahi Mahi into bite-size pieces (although I left the fillets whole and broke them up in the pan).

3. Heat 1 tbsp oil in a non-stick pan on a medium heat. Add the Sri Lankan spice and stir for a minute.

4. Add the diced onion and fry for 5 mins until soft.

5. Add the tinned tomatoes and the green beans.

6. Once the water has evaporated from the tomatoes, add the coconut milk. Stir in the fish sauce. Add in the Mahi Mahi and turn the heat to low. Allow to gently bubble for 5 mins.

7. Chop and sir in 2/3 of the coriander just before serving. Garnish with more coriander for good measure.

Wife’s Verdict: I shared this with my 11-year-old daughter and it was delicious and fresh. Neither of us had tried Mahi Mahi before and it was lovely, light and delicate. The meal itself couldn’t have been easier to prepare. OK, it’s not as good as having dinner made every night by a gastronomic genius like my husband (his words, not mine) but for somebody who gets home as late as I do, it was ideal.
